Maple Date Squares

by Lauren | Celiac Teen on September 13, 2010

I don’t know about where you are, but fall is in the air here. Leaves are redistributing across lawns, ever so slowly. They’re developing brilliant yellow and deep auburn hues before beginning their final plummet to the ground. Some are clinging to their greens the way in which a 3 year old clings to their blanket. Others are starting to accept their fate, but most are at least attempting to make it to Thanksgiving. We’ll see.

With leaves changing, the weather is obviously getting cooler. It’s getting chilly. Some afternoons, you can manage without a jacket, but most require a sweater, or at least one that’s handy. With cooler weather, my family starts to ask for treats like this. Treats that are comforting and stomach-pleasing. Treats that are simple, packed with memories and are sure to warm us up, even if they’re not heated. This was exactly what we were looking for. Dates, maple, orange, happy stomachs all around. It hit all of the right notes and was just what we wanted in a date square. I hope that you’ll like it too.

This recipe is somewhat unique (in my collection, at least), as it’s free of any gum. No, I’m not talking about the sticky, sugary stuff that’s bright pink and loves to stick itself to the underside of desks (can you imagine baking that in every cake? I shudder at the thought). I’m talking about the powder. The magic stuff that makes so many gluten-free treats work. This one, it’s a touch crumbly. But you know what? The dates hold it all together and make it absolutely wonderful. It’s exactly what I wanted.

This post is linked to Slightly Indulgent Tuesdays and Gluten-Free Wednesdays.

See? This was how it was before baking. Lots of flat portions, then little dollops of the remainder sprinkled on top.

I loved the deep golden colour. Not too dark, but just cooked the way I wanted it.

Oh yes. A cautious split, to give the most rustic feel. There’s a freedom to leaving out the gum. Most need it, but this was perfectly happy without.

Okay, now I’m hungry. Excuse me while I go grab an apple (we’re fresh out of these!).

If I still had this bite, I’d savour it. Enjoy some for me?

Things have been fairly busy as of late, from food-filled events to school getting underway. It’s been great though. Always lovely to get back into the swing of things :). I hope you’re having a fantastic September!

xoxo

Ditto what Iris said. Looks and sounds amazing. I wish I had some quinoa flakes, so I could give it a try.

I want these for breakfast. Yum.

This looks really yummy! It makes me wish I ate oats!!! Unfortunately I think 2 cups of quinoa flakes would be pretty strong in flavor, or I might make it anyway. ๐Ÿ™‚

This looks like the perfect treat to usher in the Fall weather. Thanks for sharing.

MMM. That looks way too good to be gluten-free ๐Ÿ™‚ Keep up the awesome cooking, I enjoy following your blog.

These are great! I baked them last night and served them to guests at noon. The youngest child said it tasted just like his grandma’s! I substituted a smaller amt of honey in the date mixture, and a half cup of honey in the crumb mixture. This recipe is definitely a keeper!

That looks great Lauren! It’s getting to be Spring here, slowly but surely which is very exciting indeed! ๐Ÿ™‚

Hi Lauren!
My name is Courtney, and while I do not have Celiac, I am gluten intolerant, and it’s such a relief to find blogs like yours that offer amazing recipes that won’t make my system want to kill me!

I’ve made your zuccini bread a couple times, but in muffin form, and I LOVE them! I don’t have all the ingredients, so I made a few tweaks, but I’m really impressed with your baking talent and even my mom (who is as gluten-aholic as it gets, hello Italian family) thought they tasted great!

Jennifer @ Maple n Cornbread September 25, 2010 at 8:35 am

Oh my these look SO wonderful! I love the maple and date and crumble goodness in these squares! And that they are gluten free of course ๐Ÿ™‚ Saving this!

These look wonderful. I think I need to buy some dates!

These are so delicious and date are my favourite.

Dearheart September 6, 2011 at 3:53 am

Wherever did you find gluten free dates? This looks delicious but as many dates are dusted with wheat flour (which they don’t tell you due to low standards) I may have to substitute. Super post!

Lauren | Celiac Teen September 7, 2011 at 7:58 pm

Dearheart, I have come across dates that have wheat on them, but in those cases it has always clearly said “contains wheat” or “may contain wheat” on the label. Most I’ve seen are fine though. You can always buy the dates which come in a block- which wouldn’t need flour to prevent the dates from sticking together (but still check the label!). As always though, if you’re unsure, call the company! They should have a concrete answer for you.

Lauren, Thank you for your answer, that’s really helpful. I’m looking forward to making these for me and my college peeps!

~Cheers~
