I have been gluten free for 12 years and I admit, that the road has been difficult at times (only because sometimes I didn't have the guts to assert my needs), but always has been rewarding.&lt;BR/&gt;&lt;BR/&gt;And also as a mom I would have to say that I am so proud to hear you say that you CAN eat healthy and still be GF!  You are right, poor imitations of things we 'remember' are devoid of nutrients.  Finding the naturally gluten free items are worth it!&lt;BR/&gt;&lt;BR/&gt;I got back from a trip to Brazil last May completely 'in awe' of their product labeling.  Did you know that just about everything that is packaged there either says that it 'has' gluten, or is 'gluten free'?  I WISH we had that here in the US, and eventually it will happen.  I can't wait (although I still rely on my own skills in reading labels to keep myself safe).  The other thing that I loved about Brazil, is that everywhere you go they serve a traditional bread (Pan de Queijo) that is naturally Gluten Free!  Oh my goodness is it good!
