Has anyone tried this with non-dairy milk? Any suggestions? Usually a high protein content is needed. I usually do gluten-free or vegan, but I've been given dr's orders to get on top of avoiding wheat and dairy. Period.

Ah, Lauren, you never disappoint with your lovely writing. What a hopeful outlook for this year!

These scones look scrumptious. And yes, measuring with a scale is so wonderful - no need to worry if you measured the flour out correctly.

It's on my 'notes' on my FB page (Nadya King) - I use coconut milk & oil, & flax 'eggs' - 1 Tbsp ground flax & 2 Tbsp 'liquid' - I used pureed pumpkin & applesauce for the 'liquid' portion (I sometimes just add the flax with the flour, at other times mix up the 'egg') My grown daughter is egg yolk sensitive, & our family avoids dairy as well.
There's also the recipe for macaroon/cookies :)

Hi Dia I'd love that recipe!

Lauren is there a reason you did not use buttermilk and baking soda? Just wondering, maybe something related to Celiac needs. I always do it that way.

I'm happy to hear you've had such a good year. When you don't post I never think oh she's cracking the books. I wonder... .

Happy New Year Lauren. Looking forward to lots of great posts from you in 2012.
