
No, seriously. Â If you make these, they will disappear into thin air. Â Obscenely addictive, they beckon you with their every movement. Â Not-quite-crunchy cornflakes masquerading as oats, caramelized in the not-too-sweet cookie, topped with marshmallows that quickly toast and spread into the increasingly addictive substance. Â Did I mention increasingly addictive? Â Don't say I didn't warn you. Â Just writing this up makes me want to make another batch. Â In fact I think I have all of the ingredients...

Cornflake Marshmallow Lace Cookies
Adapted from The Cookbook Chronicles. Â Adapted by Lauren of Celiac Teen.
Ingredients
2 sticks unsalted butter
1 1/4 cups brown sugar
1/3 cup sugar
2 eggs
2 tsp vanilla
1 tsp xanthan gum
1/2 cup sorghum flour
1/2 cup millet flour
1/2 cup tapioca starch
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp kosher salt
2/3 cup quinoa flakes
1 1/4 cups lightly crushed gluten-free cornflakes
2/3 cup mini chocolate chips
3/4 cups or so mini marshmallows
Steps
Preheat oven to 350 degrees Fahrenheit. Â Line a few cookie sheets with parchment paper.
Beat together butter and sugars, until light in colour and fluffy. Â Add eggs and vanilla. Â Continue to beat until combined. Â Add xanthan gum, sorghum flour, millet flour, tapioca starch, baking powder, baking soda and salt. Â Mix on low speed until the dry ingredients are just incorporated. Â Using a wooden spoon, mix in the quinoa flakes, crushed cornflakes and chocolate chips.
Roll the dough into balls, about the size of golf balls. Â Place about 6 on each pan (seriously. Â They spread like crazy). Â Lightly press 4 mini marshmallows into the middle of each ball of dough. Â Sprinkle a bit more salt on top.
Bake for 9 to 12 minutes, until spread and golden. Â Allow them to cool on the cookie sheet before serving.

I love cornflake cookies! There's a NZ cookie called the Afghan and that uses crushed up cornflakes and you get the nicest crunch. Much like these I'd think! :)

Those remind me so much of my brown sugar chocolate chip cookies, which are thin and caramelized. I will try these eventually, but no marshmallows or corn flakes in the house right now, so I'm safe. LOL Great photos! Too cute on your brother and father. ;-)

Cornflakes, marshmallows and chocolate chips - sounds like the all-American cookie! (All that's missing is peanut butter!) I love how thin and lacy they look!

Oooh these look great! My husband has a thing for marshmallows too, so I know he would just love these cookies! I don't know if we have gluten free cornflakes here but we def. have GF coco pops which I think should work when I give this a try...yum!!
