		<description><![CDATA[We just made these as one of our snacks for the week and they turned out perfectly! We used medium grain corn meal which turned out to be little to hard so next time we&#039;ll use small grain. we used 1 tsp of peanut butter (or 1/4 cup) instead of half a tsp and then calculated up all the calories. Each muffin was about 260 calories which is actually really good. The recipe was a tiny bit sweet for us and heavy on the butter so next time we&#039;re going to try substituting some applesauce for half the butter and cutting the sugar in half. Thanks so much for this wonderful recipe :)]]></description>
